  • 1 cup old-fashioned rolled oats
  • 1 cup milk of choice (dairy, almond, or oat milk)
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon chia seeds
  • 1 medium apple, finely diced
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Wash, core, and finely dice your apple into small, bite-sized pieces. If you prefer a softer texture, you can grate half of the apple and dice the other half for a mix of textures.
  2. In a medium-sized bowl or directly into two glass mason jars, combine the rolled oats, chia seeds, ground cinnamon, and a pinch of salt. Stir well to distribute the spices.
  3. Pour in the milk, Greek yogurt, maple syrup, and vanilla extract. Whisk or stir vigorously until the yogurt is fully incorporated and no dry clumps of oats remain.
  4. Gently fold the diced apples into the oat mixture. Ensure the apples are submerged so they can absorb some of the liquid and spice during the soaking process.
  5. Seal the jars tightly with lids. Place them in the refrigerator for at least 6 hours, though overnight (8 hours) is ideal for the best creamy consistency. Give them a quick stir before eating the next morning.
