  • Total Time: 10 minutes

Ingredients

Scale
  • 1/2 cup old-fashioned rolled oats
  • 2/3 cup milk (dairy, almond, or oat milk)
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon chia seeds
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey
  • 1/2 medium apple, finely diced
  • 2 tablespoons chopped walnuts
  • A pinch of salt

Instructions

  1. In a mason jar or a small resealable container, add the rolled oats, chia seeds, ground cinnamon, and a tiny pinch of salt. Stir these together so the cinnamon and seeds are evenly distributed through the oats.
  2. Pour in your choice of milk, the Greek yogurt, vanilla extract, and maple syrup. Stir the mixture thoroughly until the yogurt is fully incorporated and there are no dry clumps of oats or seeds at the bottom.
  3. Gently stir in the finely diced apples. Ensure the apple pieces are submerged or coated in the liquid to help keep them fresh and infuse the oats with their natural sweetness.
  4. Seal the container with a lid and place it in the refrigerator for at least 6 hours, though overnight is best. This allows the oats and chia seeds to soak up the liquid, creating a thick and creamy texture.
  5. In the morning, give the oats a quick stir. If the mixture is too thick, add a splash of milk. Top with the chopped walnuts right before eating to ensure they stay perfectly crunchy.
