  • Total Time: 10 minutes

Ingredients

Scale
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk of choice (dairy, almond, or oat milk)
  • 1/4 cup plain Greek yogurt (or dairy-free alternative)
  • 1/2 medium apple, core removed and finely chopped
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon pure vanilla extract
  • 2 tablespoons chopped walnuts
  • 1 teaspoon chia seeds (optional, for extra thickness)
  • A small pinch of salt

Instructions

  1. In a wide-mouth mason jar or a medium-sized glass container, add the rolled oats, cinnamon, salt, and chia seeds. Stir them briefly to distribute the spice. Pour in the milk, Greek yogurt, vanilla extract, and maple syrup. Stir everything together until the mixture is well-combined and there are no dry pockets of oats at the bottom.
  2. Gently fold the finely chopped apples into the oat mixture. Ensure the apples are submerged or coated so they stay fresh. If you prefer your walnuts to be a bit softer, you can stir half of them in now; otherwise, save them for the morning to maintain maximum crunch.
  3. Place the lid on your jar and tighten it securely. Shake the jar once more for good measure. Place the container in the refrigerator for at least 6 hours, though leaving it overnight for 8-10 hours is ideal to achieve the creamiest texture.
  4. In the morning, remove the lid and give the oats a good stir. If the mixture is too thick for your liking, splash in an extra tablespoon of milk. Top with the remaining chopped walnuts and an extra sprinkle of cinnamon before serving.
