- 3 large overripe bananas, mashed
- 1/3 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda

- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C). Grease a 4×8-inch loaf pan with butter or non-stick cooking spray to ensure the bread releases easily after baking.
- In a large mixing bowl, peel the overripe bananas and use a fork or a potato masher to crush them until they are smooth with only a few small lumps remaining.
- Pour the melted butter into the mashed bananas and stir until well combined. Next, add the sugar, the beaten egg, and the vanilla extract. Mix everything together until the batter is smooth and well-incorporated.
- Sprinkle the baking soda and salt over the wet mixture. Gently stir them in. Finally, add the flour and fold it in using a spatula. Be careful not to overmix; stop as soon as you no longer see streaks of dry flour.
- Pour the batter into your prepared loaf pan and smooth the top with a spoon. Place it in the oven and bake for 50 to 60 minutes. You can check for doneness by inserting a toothpick into the center; if it comes out clean, the bread is done.
- Remove the pan from the oven and let the bread cool in the pan for about 10 minutes. This helps the structure set. Then, transfer the loaf to a wire rack to cool completely before slicing.
