  • 1 lb Brioche or Challah bread, cut into 1-inch cubes
  • 8 oz Cream cheese, softened and cut into small cubes
  • 2 cups Fresh blueberries
  • 8 Large eggs
  • 2 cups Whole milk
  • 1/2 cup Maple syrup (plus more for serving)
  • 1 tsp Vanilla extract
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick cooking spray to ensure the bake doesn’t stick to the sides.
  2. Place half of the bread cubes into the prepared baking dish. Scatter the cubed cream cheese and one cup of the blueberries evenly over the bread. Top with the remaining bread cubes and the rest of the blueberries.
  3. In a large mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt until the mixture is smooth and well-combined.
  4. Pour the egg mixture evenly over the bread and blueberries. Gently press down on the bread cubes with a spatula to make sure every piece is submerged and starts to soak up the liquid.
  5. Place the dish in the oven and bake for 40 to 45 minutes. The bake is done when it is puffed up, golden brown on top, and the center is set. Let it rest for 5 minutes before serving.
