- 1/2 teaspoon pure vanilla extract

Instructions
- In a medium-sized bowl or a wide-mouth glass jar, add the chia seeds, your choice of milk, sweetener, vanilla extract, and a tiny pinch of salt. The salt helps to balance the sweetness and brings out the flavor of the vanilla.
- Use a whisk or a fork to stir the mixture vigorously. Make sure all the chia seeds are submerged and not sticking to the bottom or sides of the container. Let the mixture sit for about 5 minutes at room temperature.
- After the mixture has rested for 5 minutes, give it one more good whisk. This second stir is crucial because it prevents the chia seeds from clumping together as they begin to absorb the liquid, ensuring a smooth and uniform pudding texture.
- Cover the jar or bowl with a lid or plastic wrap and place it in the refrigerator. Let it chill for at least 2 to 4 hours, or ideally overnight. The seeds will expand and turn the liquid into a thick, pudding-like consistency.
- Once the pudding is set, give it a final stir. If it is too thick for your liking, you can add a splash more milk. Serve it in bowls and top with fresh fruit, granola, or a sprinkle of cinnamon.
