- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 cup plain non-fat Greek yogurt
- 1 large egg
- 1/4 cup unsweetened almond milk (plus more if needed)
- 1 tablespoon maple syrup or stevia (for the batter)
- For the Cinnamon Swirl:
- 2 tablespoons melted coconut oil or soft butter
- 2 tablespoons coconut sugar or brown sugar alternative
- 1 tablespoon ground cinnamon
Instructions
- Step 1: Prepare the Swirl Mixture In a small bowl, whisk together the melted coconut oil, coconut sugar, and ground cinnamon until it forms a smooth, thick paste. Transfer this mixture into a small plastic sandwich bag and snip off a tiny corner to create a DIY piping bag. Set this aside for later.
- Step 2: Mix the Dry Ingredients In a large mixing bowl, combine the oat flour, vanilla protein powder, baking powder, and a pinch of cinnamon. Whisk these together to ensure there are no clumps of protein powder, which will help the pancakes rise evenly.
- Step 3: Combine the Wet Ingredients In a separate medium bowl, whisk the egg, Greek yogurt, almond milk, and sweetener until smooth. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. If the batter is too thick, add an extra tablespoon of almond milk at a time until it reaches a pourable consistency.
- Step 4: Heat the Griddle Lightly grease a non-stick skillet or griddle with cooking spray and heat it over medium-low heat. It is important to use a lower heat setting than usual so the cinnamon swirl has time to set without burning the bottom of the pancake.
- Step 5: Cook and Swirl Pour about 1/4 cup of batter onto the hot skillet for each pancake. Quickly grab your cinnamon piping bag and pipe a spiral shape starting from the center of the pancake and moving outward. Cook for about 2-3 minutes until bubbles form on the surface and the edges look set.
- Step 6: Flip and Finish Carefully flip the pancake with a wide spatula. The cinnamon side will now be face-down. Cook for another 1-2 minutes. The sugar in the swirl will caramelize slightly, creating a delicious texture. Remove from the heat and repeat with the remaining batter.
