- 1/4 cup chia seeds
- 1 cup unsweetened almond milk (or any milk of choice)
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon vanilla extract
- 2 large ripe peaches, pitted and diced
- 1/2 cup Greek yogurt (plain or vanilla)
- 2 tablespoons granola for crunch (optional)
- Fresh mint leaves for garnish
Instructions
- In a medium bowl or glass jar, combine the chia seeds, milk, maple syrup, and vanilla extract. Whisk the mixture thoroughly to ensure the seeds are well distributed and not clumping together.
- Cover the bowl or jar and place it in the refrigerator. Let it sit for at least 4 hours, or ideally overnight. After the first 30 minutes of chilling, give it one more quick stir to prevent the seeds from settling at the bottom.
- Once the chia pudding has thickened to a gel-like consistency, take your fresh peaches and dice them into bite-sized pieces. If the peaches are very tart, you can toss them with a tiny drizzle of honey beforehand.
- Take two serving glasses. Start with a layer of the chia pudding at the bottom. Follow with a layer of Greek yogurt, and then a generous layer of diced peaches. Repeat the layers until the glasses are full.
- Top each parfait with a sprinkle of granola for a satisfying crunch and a sprig of fresh mint for a pop of color. Serve immediately or keep chilled until ready to eat.
