Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or any milk of choice)
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 2 large ripe peaches, pitted and diced
  • 1/2 cup Greek yogurt (plain or vanilla)
  • 2 tablespoons granola for crunch (optional)
  • Fresh mint leaves for garnish

Instructions

  1. In a medium bowl or glass jar, combine the chia seeds, milk, maple syrup, and vanilla extract. Whisk the mixture thoroughly to ensure the seeds are well distributed and not clumping together.
  2. Cover the bowl or jar and place it in the refrigerator. Let it sit for at least 4 hours, or ideally overnight. After the first 30 minutes of chilling, give it one more quick stir to prevent the seeds from settling at the bottom.
  3. Once the chia pudding has thickened to a gel-like consistency, take your fresh peaches and dice them into bite-sized pieces. If the peaches are very tart, you can toss them with a tiny drizzle of honey beforehand.
  4. Take two serving glasses. Start with a layer of the chia pudding at the bottom. Follow with a layer of Greek yogurt, and then a generous layer of diced peaches. Repeat the layers until the glasses are full.
  5. Top each parfait with a sprinkle of granola for a satisfying crunch and a sprig of fresh mint for a pop of color. Serve immediately or keep chilled until ready to eat.
