  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk of choice (dairy, almond, or oat milk)
  • 1/4 cup pure pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mason jar or a small resealable container, add the rolled oats, chia seeds, pumpkin pie spice, and a pinch of salt. Stir these briefly to ensure the spices are evenly distributed throughout the oats.
  2. Pour in your choice of milk, the pumpkin puree, maple syrup, and vanilla extract. The pumpkin puree is quite thick, so make sure you use a spoon to get it all out of the measuring cup.
  3. Stir the mixture vigorously with a spoon until all the ingredients are well combined. Alternatively, if you are using a jar with a tight lid, you can shake it vigorously. Ensure there are no clumps of chia seeds or dry oats at the bottom.
  4. Seal the container with a lid and place it in the refrigerator. Let the oats soak for at least 4 hours, though leaving them overnight is best for the creamiest results.
  5. In the morning, remove the lid and give the oats a good stir. If the mixture is too thick for your preference, splash in a little extra milk. Add your favorite toppings and enjoy chilled.
