- 1/2 cup old-fashioned rolled oats
- 1/2 cup milk of choice (dairy, almond, or oat milk)
- 1/4 cup pure pumpkin puree (not pumpkin pie filling)
- 1 tablespoon chia seeds
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a mason jar or a small resealable container, add the rolled oats, chia seeds, pumpkin pie spice, and a pinch of salt. Stir these briefly to ensure the spices are evenly distributed throughout the oats.
- Pour in your choice of milk, the pumpkin puree, maple syrup, and vanilla extract. The pumpkin puree is quite thick, so make sure you use a spoon to get it all out of the measuring cup.
- Stir the mixture vigorously with a spoon until all the ingredients are well combined. Alternatively, if you are using a jar with a tight lid, you can shake it vigorously. Ensure there are no clumps of chia seeds or dry oats at the bottom.
- Seal the container with a lid and place it in the refrigerator. Let the oats soak for at least 4 hours, though leaving them overnight is best for the creamiest results.
- In the morning, remove the lid and give the oats a good stir. If the mixture is too thick for your preference, splash in a little extra milk. Add your favorite toppings and enjoy chilled.
