  • 1/2 cup milk of choice (dairy, almond, or oat milk)
  • 1/4 cup pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon maple syrup or honey
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon chia seeds
  • 1/4 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mason jar or a small container, add the rolled oats, chia seeds, and pumpkin pie spice. Stir these dry ingredients together to ensure the spice is evenly distributed throughout the oats.
  2. Pour in your chosen milk, pumpkin puree, maple syrup, and vanilla extract. Use a spoon to stir everything thoroughly. Make sure there are no clumps of pumpkin puree and that all the oats are submerged in the liquid.
  3. Seal the container with a lid and place it in the refrigerator. Let the oats soak for at least 4 hours, though leaving them overnight is best for the creamiest texture.
  4. The next morning, remove the lid and give the oats a good stir. If the mixture is too thick, you can add an extra splash of milk to reach your desired consistency.
