- 1/2 cup old-fashioned rolled oats
- 1/2 cup milk of choice (dairy, almond, or oat milk)
- 1/4 cup pumpkin puree (not pumpkin pie filling)
- 1 teaspoon maple syrup or honey
- 1/2 teaspoon pumpkin pie spice
- 1 teaspoon chia seeds
- 1/4 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a mason jar or a small container, add the rolled oats, chia seeds, and pumpkin pie spice. Stir these dry ingredients together to ensure the spice is evenly distributed throughout the oats.
- Pour in your chosen milk, pumpkin puree, maple syrup, and vanilla extract. Use a spoon to stir everything thoroughly. Make sure there are no clumps of pumpkin puree and that all the oats are submerged in the liquid.
- Seal the container with a lid and place it in the refrigerator. Let the oats soak for at least 4 hours, though leaving them overnight is best for the creamiest texture.
- The next morning, remove the lid and give the oats a good stir. If the mixture is too thick, you can add an extra splash of milk to reach your desired consistency.
