- 1.5 lbs Salmon fillets, skin removed and cut into 1-inch cubes
- 2 tablespoons Cornstarch
- 1 teaspoon Garlic powder
- 1 teaspoon Smoked paprika
- 1/2 teaspoon Salt
- 1/2 teaspoon Black pepper
- 2 tablespoons Olive oil or Avocado oil
- 1/4 cup Honey
- 1 tablespoon Sriracha or your favorite hot sauce
- 1 teaspoon Red chili flakes
- 1 teaspoon Apple cider vinegar
- Fresh parsley or green onions for garnish

- Step 1: Prepare the Salmon
Pat the salmon cubes very dry with a paper towel. This is the most important step for achieving a crispy texture. Place the dried cubes in a large bowl and sprinkle with cornstarch, garlic powder, smoked paprika, salt, and pepper. Toss gently until every piece is evenly coated. - Step 2: Sear the Salmon
Heat the oil in a large non-stick skillet over medium-high heat. Once the oil is shimmering, add the salmon cubes in a single layer, making sure not to crowd the pan. Cook for 2 to 3 minutes per side until they are golden brown and crispy. Remove the salmon from the pan and set aside on a plate. - Step 3: Create the Hot Honey Glaze
In the same skillet (wipe out excess oil if necessary), turn the heat down to medium. Add the honey, sriracha, red chili flakes, and apple cider vinegar. Stir constantly for about 1 minute until the mixture begins to bubble and slightly thicken. - Step 4: Toss and Finish
Add the crispy salmon bites back into the skillet with the glaze. Toss gently for 30 seconds to 1 minute until every piece is coated in the sticky sauce. Be careful not to cook too long, or the honey may burn. Remove from heat immediately. - Step 5: Garnish and Serve
Transfer the salmon bites to a serving dish. Garnish with fresh parsley, sliced green onions, or an extra pinch of chili flakes for more heat. Serve immediately while hot and crispy.
