- 1 cup (225g) Unsalted butter
- 1 1/2 cups (300g) Light brown sugar, packed
- 1 Large egg, room temperature
- 1 tablespoon Vanilla extract
- 2 cups (250g) All-purpose flour
- 1 teaspoon Ground cinnamon
- 1/2 teaspoon Baking powder
- 1/2 teaspoon Salt
- 2 cups Tart apples (like Granny Smith), peeled and diced small
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving a slight overhang on the sides. This will make it much easier to lift the blondies out once they have cooled.
- Place the butter in a medium saucepan over medium heat. Melt the butter, then continue to cook while whisking constantly. The butter will foam, then turn clear, and finally begin to turn golden brown with small dark specks at the bottom. Once it smells nutty, immediately remove it from the heat and pour it into a large mixing bowl to stop the cooking process.
- Add the brown sugar to the warm brown butter and whisk until well combined and smooth. Let the mixture cool for about 5 minutes. Whisk in the egg and vanilla extract until the batter looks glossy and fully emulsified.
- In a separate small bowl, whisk together the flour, cinnamon, baking powder, and salt. Gradually add the dry ingredients to the butter mixture. Use a spatula to fold the flour in gently until just combined. Do not overmix, as this can make the blondies tough.
- Gently fold the diced apples into the thick batter. The batter will be quite heavy, so ensure the apples are evenly distributed throughout. This ensures every bite has a bit of fruit.
- Spread the batter into the prepared baking pan, smoothing the top with your spatula. Bake for 30 to 35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with just a few moist crumbs. Avoid overbaking to keep them chewy.
- Allow the blondies to cool completely in the pan set on a wire rack. This is a crucial step, as the blondies will continue to set as they cool. Once cool, lift them out using the parchment paper and slice into 16 squares.
