Ingredients
Scale
- 1 cup unsalted butter
- 1 ½ cups light brown sugar, packed
- 1 large egg, room temperature
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ¼ teaspoon ground nutmeg
- 2 cups Granny Smith apples, peeled and finely diced
Instructions
- Step 1: Brown the Butter – Place the butter in a medium saucepan over medium heat. Melt the butter, then continue cooking while whisking constantly. The butter will foam up and then begin to develop small brown specks. Once it smells nutty and looks golden brown, remove it from the heat immediately and pour it into a large mixing bowl to cool slightly.
- Step 2: Preheat and Prepare – Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking pan with parchment paper, leaving a little overhang on the sides for easy removal later. Lightly grease the parchment with cooking spray.
- Step 3: Mix the Wet Ingredients – Add the brown sugar to the slightly cooled brown butter and whisk until smooth. Add the egg and vanilla extract, beating the mixture until it is well combined and slightly lightened in color.
- Step 4: Incorporate Dry Ingredients – In a separate small bowl, whisk together the flour, cinnamon, salt, and nutmeg. Gradually fold the dry ingredients into the butter mixture using a spatula. Stir just until no streaks of flour remain. Be careful not to overmix, as this can make the blondies tough.
- Step 5: Fold in the Apples – Gently fold the diced apples into the thick batter until they are evenly distributed. The batter will be quite stiff, but the moisture from the apples will help it level out during baking.
- Step 6: Bake to Perfection – Spread the batter evenly into the prepared baking pan. Bake for 30 to 35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with just a few moist crumbs. Let the blondies cool completely in the pan before lifting them out and slicing.
