  • Total Time: 30 minutes

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted unsalted butter
  • 2 cups Granny Smith apples, peeled, cored, and finely diced
  • Vegetable oil for frying
  • For the Glaze: 1 1/2 cups powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract

Instructions

  1. Step 1: Prepare the Apples – Peel, core, and dice your apples into small, uniform pieces, about 1/4-inch thick. Using tart apples like Granny Smith ensures they hold their shape and provide a nice contrast to the sweet batter.
  2. Step 2: Mix the Dry Ingredients – In a large mixing bowl, whisk together the all-purpose flour, light brown sugar, baking powder, cinnamon, nutmeg, and salt. Ensure there are no large lumps of brown sugar left in the mix.
  3. Step 3: Combine the Wet Ingredients – In a separate medium bowl, whisk together the milk, eggs, vanilla extract, and melted butter until the mixture is smooth and well combined.
  4. Step 4: Create the Batter – Gently pour the wet ingredients into the dry ingredients. Stir with a spatula or wooden spoon until just combined. Be careful not to overmix, as this can make the fritters tough. Fold in the diced apples until they are evenly distributed.
  5. Step 5: Heat the Oil – In a heavy-bottomed pot or a deep skillet, heat about 2 inches of vegetable oil to 350°F (175°C). Use a candy thermometer to monitor the temperature, as oil that is too hot will burn the outside while leaving the inside raw.
  6. Step 6: Fry the Fritters – Carefully drop about 1/4 cup of batter into the hot oil for each fritter. Flatten them slightly with the back of a spoon. Fry for 2-3 minutes per side until they are deep golden brown. Work in batches to avoid crowding the pot.
  7. Step 7: Drain and Glaze – Remove the fritters with a slotted spoon and place them on a wire rack set over paper towels to drain. While they are still warm, whisk the glaze ingredients together and drizzle or dip the fritters into the glaze. Let them set for a few minutes before serving.
