  • Total Time: 1 hour 5 minutes

Ingredients

Scale
  • 1 cup fresh apple cider (reduced to 1/2 cup)
  • 3 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup salted caramel sauce (for drizzling)
  • 2 tablespoons melted butter and 1/4 cup cinnamon sugar (for topping)

Instructions

  1. Step 1: Reduce the Apple Cider – Place 1 cup of apple cider in a small saucepan over medium heat. Simmer until the liquid has reduced to 1/2 cup. This should take about 10-15 minutes. Let it cool completely before using. This step is crucial for an intense apple flavor.
  2. Step 2: Prepare the Oven and Pan – Preheat your oven to 350°F (175°C). Generously grease and flour a 10-cup Bundt pan or a standard tube pan to ensure the cake releases easily after baking.
  3. Step 3: Whisk Dry Ingredients – In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set this mixture aside.
  4. Step 4: Cream Butter and Sugars – In a large mixing bowl or a stand mixer, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This usually takes about 3 to 4 minutes.
  5. Step 5: Incorporate Wet Ingredients – Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, the cooled reduced apple cider, and the sour cream until well combined.
  6. Step 6: Combine and Bake – Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix. Pour the batter into the prepared pan and bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Step 7: Apply the Donut Finish – Allow the cake to cool in the pan for 10 minutes before inverting it onto a wire rack. While still warm, brush the exterior with melted butter and sprinkle with cinnamon sugar. Once completely cool, drizzle generously with salted caramel sauce.
