  • Total Time: 1 hour 5 minutes

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup old-fashioned rolled oats
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 4 large Granny Smith apples, peeled and thinly sliced
  • 1 tablespoon lemon juice
  • 1/2 cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon (for filling)
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×9 inch baking pan or line it with parchment paper, leaving an overhang on the sides for easy removal of the bars later.
  2. In a large mixing bowl, whisk together the flour, oats, 3/4 cup granulated sugar, light brown sugar, baking powder, salt, and 1 teaspoon of cinnamon. Use a pastry cutter or a fork to cut in the cold, cubed butter until the mixture resembles coarse crumbs. Beat the egg and stir it into the flour mixture until well combined and slightly clumpy.
  3. Take about two-thirds of the crumble mixture and press it firmly and evenly into the bottom of your prepared baking pan. This forms the sturdy base of your bars. Set the remaining crumble mixture aside for the topping.
  4. In another bowl, toss the sliced apples with the lemon juice. In a small container, mix the 1/2 cup sugar, cornstarch, 1 teaspoon cinnamon, and nutmeg. Sprinkle this dry mixture over the apples and toss until every slice is evenly coated.
  5. Spread the prepared apple slices evenly over the pressed crust in the pan. Try to flatten them out so they sit in a relatively even layer without too many large gaps.
  6. Evenly sprinkle the remaining crumble mixture over the top of the apples. Place the pan in the preheated oven and bake for 40 to 45 minutes, or until the topping is golden brown and the apple filling is bubbling.
  7. Remove the pan from the oven and place it on a wire rack. Let the bars cool completely in the pan before slicing. This allows the filling to set properly so the bars hold their shape. Once cooled, lift them out using the parchment paper and cut into 16 squares.
