- 2 cups small curd cottage cheese (full fat recommended for creaminess)
- 1/2 cup fresh blueberries
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
- Optional: Mint leaves for garnish
Instructions
- Place the cottage cheese, lemon juice, honey, and vanilla extract into a high-speed blender or food processor. Blend on high until the mixture is completely smooth and no lumps remain. This usually takes about 1 to 2 minutes.
- Once the mixture is smooth, stir in the lemon zest by hand. Do not blend the zest, as you want the tiny flecks of yellow to provide bursts of flavor and a beautiful visual appeal throughout the fluff.
- Gently fold in most of the fresh blueberries using a spatula. Be careful not to crush them too much if you want whole berries, or press a few against the side of the bowl if you prefer a purple swirl effect in your fluff.
- Transfer the fluff into individual serving bowls or jars. For the best texture, let it chill in the refrigerator for at least 30 minutes before eating. Garnish with the remaining blueberries and a sprig of mint before serving.
