  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • Optional: 1/4 cup whipped topping or Greek yogurt for extra fluffiness
  • Optional: Mint leaves for garnish

Instructions

  1. Step 1: Blend the Base: Place the cottage cheese into a food processor or a high-speed blender. Blend on high for about 1 to 2 minutes until the mixture is completely smooth and no curds remain. It should look like a thick cream.
  2. Step 2: Add Flavorings: Add the honey, lemon zest, fresh lemon juice, and vanilla extract to the blender. Pulse a few times until the ingredients are thoroughly incorporated into the whipped cottage cheese.
  3. Step 3: Fold in the Blueberries: Transfer the mixture into a medium-sized mixing bowl. Gently fold in the fresh blueberries using a spatula. If you are using whipped topping or Greek yogurt for extra volume, fold it in at this stage as well.
  4. Step 4: Chill and Serve: For the best texture, place the bowl in the refrigerator for at least 30 minutes. This allows the flavors to meld and the “fluff” to firm up slightly. Serve chilled in individual bowls.
