Instructions

  1. Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent the cookies from sticking and ensure even browning.
  2. In a large mixing bowl, beat together the softened butter, creamy peanut butter, white sugar, and brown sugar. Use an electric hand mixer or a stand mixer on medium-high speed until the mixture is light, fluffy, and well-combined, which usually takes about 2 to 3 minutes.
  3. Add the egg and the vanilla extract to the creamed mixture. Beat again on medium speed until the egg is fully incorporated and the batter looks smooth. Be sure to scrape down the sides of the bowl with a spatula to ensure everything is mixed evenly.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. This step ensures that the leavening agents are evenly distributed so your cookies rise consistently.
