Ingredients
Scale
- 1.5 cups Biscoff or Speculoos cookies, crushed into crumbs
- 3 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened to room temperature
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1.5 teaspoons pumpkin pie spice
- 1 cup heavy whipping cream, chilled
- 1/2 cup cookie butter spread, slightly warmed for drizzling
- Optional: Extra whipped cream and whole cookies for garnish
Instructions
- Step 1: Prepare the Cookie Crust: In a small bowl, combine the crushed Biscoff cookies and the melted butter. Stir them together until the crumbs are evenly moistened. Spoon about two tablespoons of the mixture into the bottom of six small jars or dessert glasses. Press down gently with a spoon to create a base, and set aside the remaining crumbs for the middle layers.
- Step 2: Whip the Heavy Cream: In a medium chilled bowl, beat the heavy whipping cream on high speed until stiff peaks form. This will take about 2 to 3 minutes. Be careful not to overbeat it into butter. Once it is light and fluffy, set it aside in the refrigerator while you prepare the pumpkin base.
- Step 3: Mix the Pumpkin Cheesecake Filling: In a separate large bowl, beat the softened cream cheese and powdered sugar together until completely smooth. Add the pumpkin puree, vanilla extract, and pumpkin pie spice. Mix on medium speed until the color is uniform and no white streaks of cream cheese remain. Gently fold in the whipped cream using a spatula until well combined.
- Step 4: Layer the Parfaits: It is time to assemble! Over the bottom cookie crust, add a thick layer of the pumpkin cheesecake mixture. Drizzle a spoonful of warmed cookie butter over the pumpkin layer. Sprinkle another layer of cookie crumbs on top. Repeat the process with one more layer of pumpkin filling, finishing with a final drizzle of cookie butter.
- Step 5: Chill and Set: Place the parfaits in the refrigerator for at least two hours. This allows the cheesecake filling to firm up and the flavors to meld together. For the best texture, keep them covered with plastic wrap while they chill.
- Step 6: Garnish and Serve: Just before serving, top each parfait with a dollop of fresh whipped cream and a whole cookie or extra crumbs. Serve cold and enjoy the creamy, spicy goodness!
