  • 1/2 cup unsalted butter, softened to room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 cup graham cracker crumbs (about 78 full sheets)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups mini marshmallows
  • 1 1/2 cups semi-sweet chocolate chips (or 34 standard chocolate bars, broken into pieces)

Instructions

  1. Step 1: Preheat and Prepare the Pan: Preheat your oven to 350°F (175°C). Grease an 8×8 inch square baking pan with butter or non-stick spray. For the easiest removal, line the pan with parchment paper, leaving a slight overhang on the sides to use as handles later.
  2. Step 2: Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using a hand mixer or stand mixer. Continue mixing for about 2 minutes until the mixture is light, fluffy, and pale in color.
  3. Step 3: Add Wet Ingredients: Add the egg and vanilla extract to the butter mixture. Beat again on medium speed until the ingredients are fully combined and the batter looks smooth.
  4. Step 4: Combine Dry Ingredients: In a separate medium bowl, whisk together the flour, graham cracker crumbs, baking powder, and salt. Gradually add these dry ingredients to the wet mixture, stirring on low speed or by hand until a soft dough forms.
  5. Step 5: Layer the Bottom Crust: Divide the dough into two roughly equal portions. Press one half of the dough firmly into the bottom of your prepared baking pan to create an even layer. This will serve as the sturdy base for your toppings.
  6. Step 6: Add the Filling: Spread the chocolate chips (or broken chocolate bar pieces) evenly over the bottom dough layer. Top the chocolate with an even layer of mini marshmallows, pressing them down slightly into the chocolate.
  7. Step 7: Add the Top Layer and Bake: Take the remaining cookie dough and flatten small pieces of it with your hands. Place these flattened pieces over the marshmallow layer. It is okay if some marshmallows are still peeking through; they will toast beautifully in the oven. Bake for 30 to 35 minutes until the edges are golden brown. Let the bars cool completely in the pan before slicing.
