- 1/2 cup unsalted butter (one stick)
- 1 1/2 cups heavy whipping cream
- 2 cloves garlic, finely minced
- 1 1/2 cups freshly grated Parmesan cheese
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon cracked black pepper
- 1/8 teaspoon ground nutmeg (optional)
- Fresh parsley, chopped for garnish
Instructions
- Place a medium saucepan over medium-low heat. Add the unsalted butter and let it melt completely. Be careful not to let the butter brown, as this will change the color and flavor of your sauce.
- Add the minced garlic to the melted butter. Sauté for about 1 minute, or until the garlic becomes fragrant and soft. Do not let the garlic turn brown or burnt, as it will make the sauce taste bitter.
- Pour the heavy whipping cream into the saucepan. Increase the heat slightly to medium and bring the mixture to a gentle simmer. Let it cook for about 3 to 5 minutes, stirring frequently with a whisk until it thickens slightly.
- Reduce the heat to low. Gradually whisk in the freshly grated Parmesan cheese. Add it in small handfuls, stirring constantly until the cheese is completely melted and the sauce is smooth and creamy.
- Stir in the salt, black pepper, and optional nutmeg. Taste the sauce and adjust the seasoning if necessary. Remove from heat immediately and toss with your favorite cooked pasta. Garnish with fresh parsley before serving.
