  • Total Time: 45 minutes

Ingredients

Scale
  • 1 lb ground pork
  • 1/2 lb ground beef (80/20 blend)
  • 1/2 cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 1/4 cup milk
  • 1 teaspoon dried sage
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 large tart apples (like Granny Smith or Honeycrisp), cored and sliced
  • 2 cups fresh apple cider
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Fresh parsley for garnish

Instructions

  1. Step 1: Mix the Meatball Ingredients In a large mixing bowl, combine the ground pork, ground beef, panko breadcrumbs, egg, milk, dried sage, nutmeg, salt, and pepper. Use your hands to gently mix until all ingredients are just incorporated. Be careful not to overwork the meat, as this can make the meatballs tough.
  2. Step 2: Shape the Meatballs Scoop about two tablespoons of the meat mixture and roll it between your palms to form a ball roughly the size of a golf ball. Repeat this process until all the mixture is used, aiming for about 20 to 24 meatballs of uniform size.
  3. Step 3: Brown the Meatballs Heat the olive oil in a large skillet over medium-high heat. Add the meatballs in a single layer, working in batches if necessary. Sear the meatballs for 2-3 minutes per side until they are browned all over. They do not need to be cooked through at this stage. Remove them from the skillet and set aside on a plate.
  4. Step 4: Sauté the Apples In the same skillet, add the sliced apples. Sauté them for about 3-4 minutes until they begin to soften and turn slightly golden around the edges. Remove the apples from the pan and set them aside with the meatballs.
  5. Step 5: Prepare the Cider Glaze Pour the apple cider into the skillet, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Stir in the brown sugar, Dijon mustard, and apple cider vinegar. Bring the mixture to a boil, then reduce the heat and let it simmer for 8-10 minutes until the liquid has reduced by half and thickened slightly.
  6. Step 6: Simmer and Combine Return the meatballs and apples to the skillet. Toss them gently to coat in the glaze. Cover the pan and simmer for another 5-7 minutes, or until the meatballs are fully cooked through and the sauce has reached a thick, syrupy consistency. Garnish with fresh parsley before serving.
