- 1.5 lbs Sirloin or Ribeye steak, cut into 1-inch cubes
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Pat the steak cubes dry with a paper towel. This is crucial for getting a good sear. Place the cubes in a bowl and toss them with salt, black pepper, and olive oil until evenly coated.
- Place a large cast-iron skillet or heavy-bottomed frying pan over medium-high heat. Allow the pan to get very hot before adding the meat. You should see a slight wisp of smoke rising from the pan.
- Add the steak cubes to the hot skillet in a single layer. Do not overcrowd the pan; work in batches if necessary. Let the steak sear for 2 minutes without moving it to develop a brown crust. Flip and cook for another 2 minutes until cooked to your desired level of doneness.
- Reduce the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and red pepper flakes. Cook for about 1 minute until the garlic is fragrant and the butter begins to foam slightly.
- Toss the steak bites back into the garlic butter and stir well to coat every piece. Remove the pan from the heat immediately to prevent the garlic from burning. Sprinkle with fresh parsley and serve warm.
