- 1.5 lbs Sirloin steak (or Ribeye), cut into 1-inch cubes
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme or rosemary
- Fresh parsley, chopped for garnish
Instructions
- Pat the steak cubes dry with a paper towel to ensure a good sear. Place the meat in a bowl and toss with olive oil, salt, black pepper, and dried herbs until evenly coated.
- Heat a large cast-iron skillet or heavy pan over high heat until it is smoking slightly. Add the steak cubes in a single layer, making sure not to overcrowd the pan. Sear for 2 minutes without moving them to develop a brown crust, then flip and cook for another 2 minutes until browned on all sides.
- Reduce the heat to medium-low. Add the butter to the skillet along with the minced garlic. Stir constantly for about 1 minute as the butter melts and the garlic becomes fragrant, ensuring the garlic does not burn.
- Toss the steak bites thoroughly in the melted garlic butter to coat every piece. Remove the pan from the heat immediately. Sprinkle with fresh chopped parsley and serve warm.
