  • 1.5 lbs Sirloin steak (or Ribeye), cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme or rosemary
  • Fresh parsley, chopped for garnish

Instructions

  1. Pat the steak cubes dry with a paper towel to ensure a good sear. Place the meat in a bowl and toss with olive oil, salt, black pepper, and dried herbs until evenly coated.
  2. Heat a large cast-iron skillet or heavy pan over high heat until it is smoking slightly. Add the steak cubes in a single layer, making sure not to overcrowd the pan. Sear for 2 minutes without moving them to develop a brown crust, then flip and cook for another 2 minutes until browned on all sides.
  3. Reduce the heat to medium-low. Add the butter to the skillet along with the minced garlic. Stir constantly for about 1 minute as the butter melts and the garlic becomes fragrant, ensuring the garlic does not burn.
  4. Toss the steak bites thoroughly in the melted garlic butter to coat every piece. Remove the pan from the heat immediately. Sprinkle with fresh chopped parsley and serve warm.
