  • Total Time: 45 minutes

Ingredients

Scale
  • 1 lb Smoked Sausage (Kielbasa, Turkey, or Chicken sausage), sliced into rounds
  • 2 medium Sweet Potatoes, peeled and cubed into 1/2-inch pieces
  • 1 lb Brussels Sprouts, trimmed and halved
  • 1 Red Bell Pepper, chopped into large chunks
  • 1 Red Onion, cut into wedges
  • 3 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • 1/2 teaspoon Garlic Powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Step 1: Preheat and Prep – Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper or aluminum foil for easy cleanup. Prepare all your vegetables and sausage by chopping them into uniform sizes to ensure they cook evenly.
  2. Step 2: Season the Ingredients – Place the sliced sausage, sweet potatoes, Brussels sprouts, bell pepper, and red onion in a large mixing bowl. Drizzle with olive oil and add the minced garlic, thyme, rosemary, garlic powder, salt, and pepper. Toss everything together until the ingredients are well-coated with the oil and spices.
  3. Step 3: Arrange on the Sheet Pan – Spread the mixture out in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan; if the ingredients are too crowded, they will steam instead of roasting and browning. Use two pans if necessary.
  4. Step 4: Roast to Perfection – Place the baking sheet in the center rack of the oven. Roast for 25 to 30 minutes, tossing the ingredients halfway through the cooking time. The meal is done when the sweet potatoes are fork-tender and the sausage is lightly browned and crisp at the edges.
  5. Step 5: Garnish and Serve – Remove the pan from the oven and let it cool for a minute. Garnish with fresh chopped parsley if desired. Serve immediately while hot and enjoy the caramelized flavors.
