- 1 packet (approx. 7g or 1/4 oz) unflavored gelatin powder
- 1 cup cold filtered water
- 1 cup hot water (just below boiling)
- 1–2 tablespoons granulated stevia or erythritol (adjust to your preference)
- 1 teaspoon lemon juice or 1/2 teaspoon natural fruit extract (like strawberry or orange)
Instructions
- Bloom the Gelatin: Pour the cold water into a medium-sized mixing bowl. Sprinkle the unflavored gelatin powder evenly over the surface of the water. Let it sit for about 5 minutes. This process, called “blooming,” ensures the gelatin absorbs the liquid so it can dissolve smoothly without creating lumps.
- Dissolve with Hot Water: Carefully pour the hot water over the bloomed gelatin mixture. Use a whisk or a large spoon to stir the mixture continuously. Keep stirring for about 2 to 3 minutes until the gelatin granules have completely disappeared and the liquid looks perfectly clear.
- Add Sweetener and Flavor: Whisk in your choice of sugar-free sweetener and the lemon juice or fruit extract. Continue to stir until the sweetener is fully dissolved. If you are using a liquid sweetener, you only need a few drops. Taste a small spoonful (careful, it may be hot) to see if you want it sweeter or more tart.
- Portion and Chill: Pour the liquid mixture into four small ramekins or one large glass container. Place them in the refrigerator. Let the gelatin set for at least 4 hours, or until it is firm and bouncy to the touch. For the best results, leaving it overnight is even better.
