- 3 large ripe bananas (mashed)
- 2 cups rolled oats (blended into a fine flour)
- 2 scoops (approx. 60g) vanilla or unflavored protein powder
- 2 large eggs
- 1/4 cup plain non-fat Greek yogurt
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick cooking spray or line it with parchment paper for easy removal later.
- In a large mixing bowl, peel the ripe bananas and mash them thoroughly with a fork or a potato masher until they reach a smooth consistency with very few lumps.
- Add the eggs, Greek yogurt, and vanilla extract to the mashed bananas. Whisk everything together until the mixture is well combined and creamy.
- Stir in the oat flour, protein powder, baking soda, and salt. Gently fold the dry ingredients into the wet mixture using a spatula. Be careful not to overmix, as this can make the bread dense.
- Gently fold in most of the dark chocolate chips, saving a small handful to sprinkle on top of the batter once it is in the pan.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the remaining chocolate chips over the surface. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Remove the pan from the oven and let the bread cool in the pan for at least 10 minutes. Transfer it to a wire rack to cool completely before slicing into 10 even pieces.
