  • 3 large ripe bananas (mashed)
  • 2 cups rolled oats (blended into a fine flour)
  • 2 scoops (approx. 60g) vanilla or unflavored protein powder
  • 2 large eggs
  • 1/4 cup plain non-fat Greek yogurt
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick cooking spray or line it with parchment paper for easy removal later.
  2. In a large mixing bowl, peel the ripe bananas and mash them thoroughly with a fork or a potato masher until they reach a smooth consistency with very few lumps.
  3. Add the eggs, Greek yogurt, and vanilla extract to the mashed bananas. Whisk everything together until the mixture is well combined and creamy.
  4. Stir in the oat flour, protein powder, baking soda, and salt. Gently fold the dry ingredients into the wet mixture using a spatula. Be careful not to overmix, as this can make the bread dense.
  5. Gently fold in most of the dark chocolate chips, saving a small handful to sprinkle on top of the batter once it is in the pan.
  6. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the remaining chocolate chips over the surface. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  7. Remove the pan from the oven and let the bread cool in the pan for at least 10 minutes. Transfer it to a wire rack to cool completely before slicing into 10 even pieces.
