- 1/2 teaspoon vanilla extract
- 1 teaspoon honey or maple syrup (optional)
- 1/2 cup fresh strawberries, sliced
- 1 graham cracker, crushed
- A squeeze of fresh lemon juice
Instructions
- Place the cottage cheese in a small blender or food processor. Blend until it is completely smooth and creamy. This step is essential to remove the curds and create a texture that mimics traditional cheesecake filling.
- In a medium mixing bowl, combine the blended cottage cheese with the Greek yogurt. Whisk them together until the mixture is uniform and airy.
- Slowly add the vanilla protein powder, vanilla extract, and a squeeze of lemon juice to the bowl. Stir gently until the powder is fully incorporated and there are no lumps. If you prefer a sweeter taste, fold in the honey or maple syrup at this stage.
- Wash and slice your fresh strawberries. Crush the graham cracker into small pieces or fine crumbs, depending on your preference for texture.
- Pour the cheesecake mixture into a serving bowl. Top it with the sliced strawberries and sprinkle the graham cracker crumbs over the top. Serve immediately or chill for 30 minutes for an even firmer consistency.
