Ingredients
Scale
- 1 package (0.3 oz) Sugar-Free Gelatin (any flavor)
- 1 cup boiling water
- 1/2 cup cold water
- 1 cup non-fat plain Greek yogurt (or blended low-fat cottage cheese)
- 1/2 cup fresh berries (optional, for topping)
- Optional: A splash of vanilla extract for extra flavor
Instructions
- Step 1: Dissolve the Gelatin. Pour the sugar-free gelatin powder into a medium-sized mixing bowl. Add one cup of boiling water and whisk continuously for about two minutes until the powder is completely dissolved and no granules remain at the bottom.
- Step 2: Add Cold Water. Stir in half a cup of cold water. This helps lower the temperature of the mixture slightly before you add the creamy component, preventing any curdling of the yogurt.
- Step 3: Combine with Protein. Add the plain Greek yogurt (or blended cottage cheese) to the gelatin mixture. Use a whisk or an electric hand mixer on low speed to combine until the mixture is completely smooth and uniform in color. This creates that desirable mousse-like texture.
- Step 4: Portion and Chill. Pour the mixture into four individual serving dishes or one large glass bowl. Place them in the refrigerator and let them chill for at least 4 hours, or until the gelatin is completely firm and set.
- Step 5: Garnish and Serve. Once set, remove from the fridge. Top with fresh berries if desired and enjoy your healthy, high-protein dessert immediately.
