  • Total Time: 4 hours 10 minutes

Ingredients

Scale
  • 1 package (0.3 oz) Sugar-Free Gelatin (any flavor)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 cup non-fat plain Greek yogurt (or blended low-fat cottage cheese)
  • 1/2 cup fresh berries (optional, for topping)
  • Optional: A splash of vanilla extract for extra flavor

Instructions

  1. Step 1: Dissolve the Gelatin. Pour the sugar-free gelatin powder into a medium-sized mixing bowl. Add one cup of boiling water and whisk continuously for about two minutes until the powder is completely dissolved and no granules remain at the bottom.
  2. Step 2: Add Cold Water. Stir in half a cup of cold water. This helps lower the temperature of the mixture slightly before you add the creamy component, preventing any curdling of the yogurt.
  3. Step 3: Combine with Protein. Add the plain Greek yogurt (or blended cottage cheese) to the gelatin mixture. Use a whisk or an electric hand mixer on low speed to combine until the mixture is completely smooth and uniform in color. This creates that desirable mousse-like texture.
  4. Step 4: Portion and Chill. Pour the mixture into four individual serving dishes or one large glass bowl. Place them in the refrigerator and let them chill for at least 4 hours, or until the gelatin is completely firm and set.
  5. Step 5: Garnish and Serve. Once set, remove from the fridge. Top with fresh berries if desired and enjoy your healthy, high-protein dessert immediately.
