Ingredients
Scale
- 1 pint cherry tomatoes (red or multi-colored)
- 8 ounces fresh mozzarella pearls or bocconcini (small balls)
- 1 bunch fresh basil leaves
- 2 tablespoons extra virgin olive oil
- 1/4 cup balsamic glaze
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 12–24 wooden skewers or toothpicks
Instructions
- Begin by washing the cherry tomatoes and the fresh basil leaves under cold water. Pat them completely dry with a paper towel. If using larger mozzarella balls, cut them into bite-sized pieces; if using pearls, simply drain them from their liquid.
- Take a wooden skewer and thread one cherry tomato onto it. Fold a basil leaf in half or quarters and slide it onto the skewer next. Finish the stack by adding a mozzarella ball. Repeat this process until all ingredients are used, placing the finished skewers on a clean serving tray.
- Just before serving, arrange the skewers on your platter. Drizzle the extra virgin olive oil evenly over the tomatoes and cheese. Next, drizzle the balsamic glaze in a decorative zig-zag pattern across the skewers. Sprinkle with sea salt and freshly ground black pepper to taste.
