Ingredients

  • 1 pint cherry tomatoes (red or multi-colored)
  • 8 ounces fresh mozzarella pearls or bocconcini (small balls)
  • 1 bunch fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup balsamic glaze
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1224 wooden skewers or toothpicks

Instructions

  1. Begin by washing the cherry tomatoes and the fresh basil leaves under cold water. Pat them completely dry with a paper towel. If using larger mozzarella balls, cut them into bite-sized pieces; if using pearls, simply drain them from their liquid.
  2. Take a wooden skewer and thread one cherry tomato onto it. Fold a basil leaf in half or quarters and slide it onto the skewer next. Finish the stack by adding a mozzarella ball. Repeat this process until all ingredients are used, placing the finished skewers on a clean serving tray.
  3. Just before serving, arrange the skewers on your platter. Drizzle the extra virgin olive oil evenly over the tomatoes and cheese. Next, drizzle the balsamic glaze in a decorative zig-zag pattern across the skewers. Sprinkle with sea salt and freshly ground black pepper to taste.
