- 2 cups plain Greek yogurt (2% or full fat works best for creaminess)
- 1 scoop vanilla or chocolate protein powder
- 1 tablespoon honey or maple syrup (optional, depending on protein powder sweetness)
- 1/2 cup mini marshmallows
- 1/4 cup mini chocolate chips
- 2–3 graham crackers, roughly crushed
- A pinch of sea salt (optional, for flavor balance)
Instructions
- Step 1: Prepare the Baking Sheet – Line a large rimmed baking sheet with parchment paper or a silicone baking mat. This ensures the bark won’t stick and makes it much easier to break into pieces once it is fully frozen.
- Step 2: Mix the Protein Yogurt Base – In a medium-sized mixing bowl, combine the Greek yogurt, protein powder, and the optional honey or maple syrup. Whisk or stir vigorously until the mixture is completely smooth and no clumps of protein powder remain.
- Step 3: Spread the Mixture – Pour the yogurt mixture onto the prepared baking sheet. Use a spatula to spread it into an even layer about 1/4 to 1/2 inch thick. Try to keep the edges relatively straight to ensure even freezing.
- Step 4: Add the S’mores Toppings – Evenly sprinkle the mini marshmallows, mini chocolate chips, and crushed graham crackers over the top of the yogurt. Lightly press the toppings down with your hands or the back of a spoon so they “sink” slightly into the yogurt and stay secure.
- Step 5: Freeze Until Solid – Place the baking sheet flat in the freezer. Let it freeze for at least 3 hours, or until the yogurt is completely firm and solid to the touch.
- Step 6: Break and Serve – Once frozen, remove the sheet from the freezer. Use your hands to break the bark into irregular shards or use a sharp knife to cut it into squares. Enjoy immediately before it starts to melt!
