  • Total Time: 15 minutes

Ingredients

Scale
  • 3 ripe mangos, peeled and diced
  • 1 red bell pepper, finely chopped
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon salt (or to taste)

Instructions

  1. Start by peeling your mangos and dicing them into small, uniform cubes. Chop the red bell pepper and red onion to a similar size to ensure a consistent texture. Finely mince the jalapeño, removing the seeds if you prefer a milder salsa.
  2. Place the diced mangos, bell pepper, red onion, jalapeño, and fresh cilantro into a large mixing bowl. Use a large spoon to gently toss the ingredients together until the colors are evenly distributed.
  3. Drizzle the fresh lime juice over the mixture and sprinkle with salt. Toss everything again to ensure the lime juice coats all the pieces of fruit and vegetables, which helps preserve the color and enhance the flavors.
  4. For the best results, let the salsa sit for about 10 to 15 minutes before serving. This allows the juices to meld and the onion to soften slightly. If you have time, chilling it in the refrigerator for 30 minutes makes it even more refreshing.
