- 16 oz Velveeta cheese, cut into 1-inch cubes
- 1 can (10 oz) Ro-Tel Diced Tomatoes and Green Chilies (undrained)
- 1/2 teaspoon taco seasoning (optional)
- Fresh cilantro or sliced green onions for garnish
Instructions
- Place a large skillet over medium-high heat. Add the ground beef or sausage and cook until fully browned and no pink remains. Be sure to break the meat into small crumbles as it cooks for the best dip texture. Drain any excess grease from the pan thoroughly.
- Pour the entire can of Ro-Tel diced tomatoes and green chilies into the skillet with the meat. Do not drain the liquid from the can; this juice is essential for achieving the perfect dipping consistency and adds a concentrated burst of flavor.
- Add the cubed Velveeta cheese to the mixture. Turn the heat down to medium-low to prevent burning. Stir the mixture frequently until the cheese is completely melted and the dip looks smooth and velvety.
- If you prefer a little extra spice, stir in the taco seasoning now. Allow the dip to simmer for another 1 to 2 minutes to ensure everything is heated through and the flavors have melded together perfectly. Serve immediately.
